Did you make any resolutions in January? I tend not to make any resolutions these days, to be honest. I find I never stick to them past a week or so. January seems like such a long time ago now, especially as I spent mostly in a COVID haze after testing positive on the 9th January 2021.
Now I am working on my recovery; I am trying to eat better and move more. I spent the best part of 4 weeks sleeping and barely moving at all. The lingering COVID symptoms seemed to flare up my Fibromyalgia symptoms, and at times it has been like wading through the mud on a windy day wearing flip flops. I was woefully underprepared for how hard the virus would hit me and how hard the recovery progress would be.
I am working on my health by making myself move a little bit each day. I am starting with 15-minute blocks. Either a walk or a gentle, movement-based workout aimed at improving my flexibility and getting me moving at a pace that matches my current ability.
I am also trying to improve my diet, become less reliant on takeout meals, and use my slow cooker more. This is a bit hit and miss, and up to a couple of weeks ago, I couldn’t do anything more than order online. Now my shop is open; I can nip and out picking up fruit and veg and make some meals in my slow cooker, such as this campfire stew. I will be getting out my trusty blender for breakfasts and adding my morning smoothie back into my routine.

I have been making brownies using the recipe on the back of the Cacao Boost package using bananas, oats, maple syrup, hazelnuts.

Banana Vanilla Pancakes with Coconut
Cacao Cream (With Cacao Boost)
Ingredients (for cacao cream)
- 1 can of full-fat coconut milk
- 1 tbsp Bioglan Superfoods Cacao Boost
Ingredients (for pancakes)
- 1 banana
- 2 eggs, beaten
- 25g oats
- 1 tsp vanilla extract
- ½ tsp baking powder
- Dash of coconut/almond milk
Method
For Cacao Cream
- Put a can of full-fat coconut milk in the fridge for at least an hour
- Take out the fridge, open and then discard the liquid
- Beat the cream together with 1 tbsp of Bioglan Superfoods Cacao Boost – a mixer will
make this easier. - Store in the fridge for up to one week.
For Pancakes
- In a food processor, add the oats and baking powder and mix until the oats
look like flour. - Add the rest of the ingredients and mix them. Add a little bit of milk at the time
until you get the right consistency. - Heat a frying pan on medium heat and add a little coconut oil. Cook the pancakes
until golden on each side. - Serve the pancakes with berries and a dollop of coconut cream.

Getting outside at least once a day for a walk. No matter the weather or the distance. Being outside does so much for the mind and body.
To try and eat plenty of fruit and vegetables, and not too much heavily processed food (but I am a firm believer in everything in moderation!)

I don’t really have any tips on staying healthy but I feel the most important thing is to keep the mind healthy and the rest will follow. I walk to keep my head healthy and exercise cheers me up so I try to schedule it in as much as possible.
