Campfire Stew Slow Cooker Recipe
I have been making this Campfire Stew cooker recipe for so many years now. I think, in days past one of my sisters gave me the recipe from a Slimming World meal she was making. It sounded interesting so I thought I would give it a try.
I’m not known for making good substantial healthy meals but I am a sucker for a good slow cooker recipe. especially one that is super easy to make and tastes absolutely amazing. I believe it smells amazing too but as you know, I have no sense of smell so I can only take other peoples word on this.

You don’t have to take my word that this stew tastes outstanding. My best friend and her family also love it and my youngest sister is a fan too.
Generally, I tend to serve this dish over a baked potato but you can adapt this part however you choose to. I make this stew with gammon but I know other meat can be used. If you find gammon a bit too salty, I know I do, you can give it a rinse beforehand safely.
The prep for this meal is minimal so I find it easy to get started while putting my coffee on of a morning.

Cooking Time
4 hours on high, 9 hours on low in a slow cooker. I prefer to cook on low when possible as the gammon falls apart easier.
Portions
Serves 4-5 people depending on how it is eaten and who it is serving.
Ingredients for Tracey’s Campfire Stew Slow Cooker Recipe.
- Unsmoked gammon joint
- Mushroom
- Onion
- Green Pepper
- 2 tins of baked beans
- Tomato puree
- Optional over-ripe tomatoes
- Optional seasoning to taste although I find it doesn’t need any personally.
Prep
Dice the green pepper, onion and mushrooms to personal preference

Method
- Turn the slow cooker on low and put the gammon joint in first.
- Next pour in one tin of baked beans
- Add the pepper, mushroom and onion (and tomatoes if adding them in)
- Pour over the second tin of baked beans
- Add tomato puree and any preferred seasoning.
Cooking

Allow to cook on low for as long as possible and leave to cook with the lid on. Once ready to serve use forks to shred the gammon joint. If ready, the gammon joint will easily shred apart. Mix the gammon into the beans mixture and you are ready to serve.
Serve immediately with choice of side dish or on its own. If there are leftovers of the campfire stew slow cooker recipe, they can be divided up and refrigerated or frozen when cool.
I promise you, this meal absolutely hits the spot and is great comfort food and perfect to warm you up after a cold walk or busy day.

I don’t use my slow cooker very often but this recipe looks quite straight forward and tasty too!
I’m definitely going to give this a whirl – sick of the same old meals all the time. We both have various dietary issues so it’s hard to find something safe that we can both enjoy – I reckon if I leave the mushrooms out of this, or put one portion out then add the mushrooms, this should be OK! Thank you!
